Healthy Banana and Blueberry Muffins

When long distance best friends visit, evenings spent baking, watching movies, and drinking wine is always part of the itinerary, right? My best friend (aka tea mixologist/queen of tea recipes), Tea Thoughts and I collaborated to make a quick, easy and healthy recipe that is perfect for an on the go breakfast or a sweet treat during the day.

We wanted a flourless recipe with a few quick ingredients that were everyday staples in our home, so after searching we came across this recipe that inspired our healthy banana and blueberry muffins.

For the recipe we decided to substitute the chocolate chips for blueberries (mostly because we wanted to make it just a tad bit healthier so that we could save our chocolate cravings for chocolate chip cookies and plus blueberry muffins are one of my favorite foods ever!).

For the recipe, we suggest doubling all of the ingredients so that you can make a larger amount of servings as the recipe we made only made 6 regular size muffins. Below you will see twice the amount of what we used so that you can make 12 servings.

2 ripe bananas

1 cup of quick oats

1 cup of blueberries

1 teaspoon of baking powder

Next, you'll blend up the oats and baking powder in a food processor (we used our nutri-bullet which worked perfectly!). After all of that is blended, add in your bananas and blend that up as well.

After the oats, bananas, and baking powder are blended up and has a consistent texture throughout, you'll add in your blueberries (do not blend this part but instead just mix them into your base mixture). Add them to your muffin tin after spraying them down with cooking oil or whatever you use to keep them from sticking.

Bake them at 350F for 10-12 minutes (start watching them after 10 minutes to make sure they don't overcook) and then take them out and let them sit for 5 minutes to cool down. 

Then VIOLA! You have some scrumptiously simple, healthy muffins to enjoy yourself or feed your kiddos as a healthy snack!
